Quick Sourdough Cheesy Breadsticks - with Sourdough Discard
This Quick Sourdough Cheesy Breadstick with Discard is an easy beginner sourdough recipe that you'll be making again! It is a soft, garlicky, pizza-style breadstick topped with herbs, spices, and lots of cheese. No complicated shaping or proofing with this quick recipe. Just mix it up, let it rest, shape, top it with cheese and herbs, bake, and enjoy the cheesy goodness of this amazing sourdough breadstick.
In your stand mixer bowl with a dough hook attachment, combine warm water, yeast, and sugar.
Let the yeast mixture begin to foam. About 5 minutes.
Make the dough
Add garlic salt, olive oil, and sourdough discard to the mixing bowl.
Begin mixing on medium speed and add in the flour.
Mix until smooth and elastic. About 3-4 minutes.
Put in a small bowl and cover with plastic wrap. Let the breadstick dough rise in a warm place for 20 minutes.
Roll dough into a rectangle shape on a lightly floured surface with a rolling pin. Place on a greased 13x18 baking tray. Press into corners.
Cheesy Garlic Herb Butter Topping
Brush dough with 2 tbsp melted butter.
In a small bowl, combine garlic powder, oregano, parsley, Italian seasoning, salt and pepper. Lightly sprinkle the herb mixture over the dough.
Top with shredded mozzarella cheese and parmesan cheese. Let rise for 15 minutes.
Preheat oven to 400 F.
Bake breadsticks at 400 F for 15-20 minutes on the lowest rack of your oven so that the bottom gets nice and crunchy. If needed, switch to a higher rack for the last 2 minutes to give the top of the breadsticks a golden brown color.
Use a pizza cutter to cut the breadsticks. Cut the dough in half the long way. Then cut into 12 equal portions per side to get a total of 24 breadsticks.
Serve with warm homemade marinara sauce or homemade ranch dip.
Notes
You can use any type of herb or cheese for the topping. Mix it up!
