Health benefits of chia seeds
Chia seeds are small edible seeds of a flowering plant from the mint family. When mixed with liquids they have a gel-like consistency. But don’t be fooled by their small size, they are packed with fiber, protein, omega-3 fatty acids, healthy fats, magnesium, and B vitamins. They contain antioxidants that neutralize free radicals in your body. Chia seeds also contain calcium, phosphorus, and magnesium, 3 great nutrients for bone health. One serving of creamy chia pudding gives you just under 20 grams of protein.

Cool story about The Ultimate Chia Seed Pudding Recipe
At the home birth of my 4th baby, my husband was feeding the midwives some snacks in the kitchen after the baby had been born. I had made some chia pudding the day before and some rhubarb muffins. They couldn’t stop talking about how creamy and tasty it was! At my next appointment, the midwife on call asked for the recipe to share at the office. She let me know they’ve been making it ever since! It must have made quite an impression!
6 ingredients to make Chia Seed Pudding
Yogurt: This recipe contains 3 cups of Greek or regular plain yogurt. The 3 pack of Greek yogurt from Costco is what I usually use. 1 container is perfect for this recipe. Or I use homemade yogurt. It adds a great source of calcium and protein that other chia pudding recipes don’t have.
Coconut milk: The brand of coconut milk I prefer is Aroy-D cans of coconut milk. I buy them in bulk to always have them on hand for different recipes. You can substitute it with any full-fat coconut milk.
Milk: To keep it simple, we use regular whole milk. It can be substituted with unsweetened almond milk, oat milk, or any other type of milk that you prefer.
Chia Seeds: You can use black or white Chia seeds. I buy the black Chia seeds from Costco.
Honey: Honey is our sweetener of choice. I also like to use pure maple syrup if I’m in a rush and don’t want to soften honey.
Whipped Cream: The secret ingredient on how to make the creamiest, most delicious chia seed pudding recipe ever. You add in whipped cream the next morning or even after 2 to 3 hours of letting the other ingredients soak and you’ve got a perfect creamy texture. It’s really The Ultimate Chia Seed Pudding Recipe and you’ll never look back!

Tips for making the Ultimate Chia Seed Pudding Recipe
- When adding the chia seeds to milk, make sure to stir right away. If you don’t, the seeds clump together, making the pudding clumpy and the texture will be off. It will still taste amazing but it’s a lot better to stir as soon as you add the chia seeds in.
- Chia pudding lasts up to 5 days in the fridge. If it thickens too much you can add a little extra milk. If it is too thin, you can try adding more chia seeds for a thicker pudding.
- This is a perfect snack for meal prep! Fill up individual jars like a small mason jar with chia pudding. Add fresh fruit or your favorite toppings and you’ve got a healthy and filling snack.

Mix it up with different flavor combinations!
Cocoa powder: If you want a chocolaty treat, add in some cocoa powder or chocolate protein powder for extra protein.
Fruit puree: Puree your favorite fruit like fresh strawberries or raspberries and add them on top or add to the middle for a fruit layer.
Frozen fruit puree: To mix it up, take 1.5 cups of frozen fruit blend and bring to a boil. Dissolve 1 tbsp of arrowroot powder or cornstarch in 2 tbsp water and pour into the fruit mixture. Boil until thickened. Add 1 tbsp of lemon juice and 2 tbsp of honey to sweeten if needed. Serve warm or chilled on top of chia pudding for a tasty treat.
Add in different flavors: Add in pure vanilla extract and a layer of vanilla pudding for Vanilla Chia Pudding or some coconut extract and coconut flakes for Coconut Chia Pudding.
